Party snacks by candlelight – is there anything better?
There’s a song my husband plays sometimes that echos the refrain “There will be snacks.” Sometimes we sing it to each other even when the music isn’t playing.
And while the song seems to be about the end of days, mentioning survival kits and crumbled financial institutions, it still seems to imply that even the apocalypse can be made better by snacks.
Which is an idea I can totally get behind.
There’s just something about snacks that make me happy. Perhaps because making them (and eating them) suggests that friends, laughter, a nice glass of wine and plenty of fun are in my near future. Or maybe it reminds me of sitting exhausted on my couch, after the last guest has gone home, and being left alone to finish off the last odds and ends from the plates.
Whatever the reason, out of all the meals or menus I plan or partake in, it’s always the snacks that I love the most.
You should all know me well enough by now that I don’t need to explain why I spent a few days creating a recipe for a hot buttered rum Jello shot. In posts past I’ve cemented my love for jiggly alcohol, so instead we can move on to the good stuff.
Hot buttered rum always makes me think of my life-long best friend Nikki Sea. Growing up, her family would make a big batch every December to serve at their annual Christmas boat parade party. There was always some left over which, post-party, would find itself in a most unorthodox place — as part of a peanut butter sandwich.
I should mention, lest you think poorly of us, that the sandwiches were booze free. It was simply the base for the hot buttered rum, made from blending melted vanilla ice cream with sugar, vanilla and butter. Trust me, peanut butter and jelly didn’t stand a chance, that sandwich was like crack.
Last weekend I was fortunate enough to help represent my company at an open house for Painted Hills Natural Beef. While Painted Hills beef is from Fossil, OR, the company had paired up with Methven Family Wines in Dayton for the event — which meant a trip out to wine country!
Oregon wine country, as you have seen before, is a beautiful place and knowing that a fabulous — and free! — dinner was waiting made the gorgeous drive from Portland all the better. I won’t mention that gorgeous drive included an hour of terrible traffic — let’s just focus on the pretty (and delicious) stuff!
A few days ago, I shared some pictures from my latest trip to the Oregon coast. My husband and I enjoyed time (and food and beer) in Seaside and Cannon Beach, but it was Astoria that we explored the most.
Since we hadn’t done much besides eat, drink and walk the pier, we thought it would be fun to try one of the “must do” Astoria adventures — climb the Astoria Column. The column sits at the top of Coxcomb Hill, overlooking the Columbia River.
A bit of a confession: I can be strangely intimidated by certain culinary projects. Sure, I’ve made pasta by flicking water on semolina flour and I make my own dim sum, but other fairly simple things can make me stop in my tracks — like making bread from scratch.
In fact, it’s been since culinary school (back in 2001) since I’ve made bread on my own — with the exception of last year’s surprisingly successful English muffins. In general though I leave bread making to the professionals, which means I buy a lot of bread.
And while regularly baking bread is one of those things I’ve always wanted to do, I tend to chicken out when things like yeast, knead and rise come up in recipes. It just seems like too much potential for failure.
But with my combined resolutions to try new things and to attempt recipes suggested by WordPress friends, I decided it was finally time to get off the pot. I started with a recipe for French bread, posted by my friend Liz of Food For Fun.
Happily the recipe is straightforward and easy to follow, even for someone nervous about baking bread. It does take some forethought though since the dough needs to be started the day before.
After it’s spent the evening in the refrigerator, let it come to room temperature.
Remember last month in January when I said I was going to dedicate a post each month to trying a recipe made by a fellow WordPress blogger? High off my bacon-onion marmalade success, I had all the confidence in the world for February. And then my birthday happened. I spent one weekend in Tacoma with family, one weekend (my actual birthday) with a few close friends and the third weekend was my big blow-out party.
So basically I would just like all of us to pretend that February is not a short month and that I haven’t already failed at my resolution. Everyone in agreement? Excellent!
Mr Wonderful White Cake
For February, I wanted to tackle a recipe from one of my longest standing blogging buddies, Liz from food for fun and deLizious Food Communications. I actually made a recipe from her blog last summer, the Mr. Wonderful White Cake, for a family reunion potluck. And it was, in fact, just as delicious as she had promised. It was also incredibly easy to whip up which was good because I was on such a time crunch that I almost bought a cake mix. This was ten times better!
But this post needed to be new stuff and since I was already late, I figured I’d try out two of Liz’s recipes to make up for being a slacker. The first one was super quick, I whipped it up in 10 minutes: spicy edamame hummus with lime and jalapeño.
