10-grain cereal with pineapple, coconut and cashews
I’m still going strong on the Bon Appetit Food Lovers Cleanse and I have to say that the best part has been breaking out of my breakfast rut. For the past year my weekday breakfast has involved the same routine: a whole grain English muffin, toasted, slathered with peanut butter and a bit of honey. And it’s done me well — it’s a nice mix of protein, carbs and sweetness to get my day started.
But over the last 10 days, not being able to indulge in refined flours, I’ve had to mix things up.
My first experience with a breakfast from the cleanse resulted in the awesome discovery of quinoatmeal. After I polished off the last of that, I moved onto a new porridge in the form of Bob’s Red Mill 10-grain cereal. This is a blend of everything from millet and barley to brown rice and oat bran. It all cooks happily together in a matter of ten minutes or so.
A few weeks ago, while reading a blog, I came across the idea of making popsicles with coconut water for a healthy, refreshing summertime treat. And although it sounded like delicious concept, it seemed a little tame to me.
Coincidentally I had also seen something intriguing on Pinterest — pineapple chunks soaked in coconut rum, a boozy, refreshing summertime treat.
It was an absolutely gorgeous weekend in Portland. I spent about three hours on Saturday sweltering in my sunny backyard, working up the motivation to run some errands. While I waited for my lost ambition to find me, I made this delicious concoction: a coconut-milk twist in the Indian treat, the lassi.
I’ve never actually had a lassi before (and upon writing this discovered it’s pronounced luh-see which makes the title of this post little weird) but I can say this version was pretty magical. I got the recipe from my beloved magazine Bon Appetit, where a whole mouth-watering section of the newest issue is dedicated to strawberries.
I literally couldn’t wait to blend one up and the ingredients list is so short, I happened to have everything on hand to make it. Well almost everything, but happily buttermilk can be faked with milk and a squeeze of lemon juice!
